Why Iceland?

After hiking and biking cross-country I knew my next adventure must be on water.  While on my 2nd trip a Facebook article came up about two kayakers that just set the speed record around Ireland and at that moment I knew I wanted to accomplish something similar.  Attempting research on their adventure I typed “kayaking in I…” (Ireland) and “Iceland” popped up first.
